The Best Gluten Free Banana Bread

Today’s recipe is for the best gluten-free and casein-free banana bread. How do I know it’s the best? I had someone taste my banana bread who hated banana bread. She only tasted it to be polite. She then told me that it was the only banana bread that she’s ever liked. The key to baking great banana bread is using ripe, but not rotten bananas. Rotten bananas can make the read too bananay for some people.
Ingredients and Supplies Needed:
Potato masher or a fork for mashing the banana
4”x 8” bread baking pan
3 to 4 ripe, but not rotten, bananas
1/3 cup ghee (or butter or margarine)
1 egg
3/4 cup sugar
1 teaspoon vanilla
1 teaspoon baking soda
1/8 teaspoon salt
1 1/2 cups all-purpose gluten-free flour blend
1/2 teaspoon xanthan gum ONLY if your flour blend does not already contain it. When in doubt, leave it out.
Step by Step Tutorial:
Gather your ingredients and Preheat your oven to 350 Degrees Fahrenheit.
Mash your 3 or 4 bananas in a large bowl. Add 1/3 cup ghee (or butter or margarine) to banana mixture and mash. Mash in 3/4 cup sugar, one egg, and 1 teaspoon vanilla.
Switch to wooden spoon. Sprinkle 1/8 teaspoon of salt and one teaspoon baking soda over top and stir in.
Add your 1 1/2 cups of flour blend. Mix in.
Grease a 4X8” bread baking dish and add your batter. Bake for 1 hour. Cool on wire rack for 15 minutes before removing it from the baking dish. Slice and enjoy.

- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1 1/2 cups all-purpose Gluten Free Flour Blend
- 1/2 teaspoon xanthan gum ONLY if your GF flour blend does not contain it
Instructions
- Preheat the oven to 350 degrees.
- Using a potato masher, mash bananas in a large mixing bowl.
- Add ghee (or butter or margarine) to mixing bowl and continue mashing the banana mixture.
- Mash in sugar, egg, and vanilla.
- Switch to a wooden spoon. Sprinkle the baking soda and salt over the mixing bowl and mix with wooden spoon.
- Add the flour and xanthan gum (if not in your flour blend) and mix until everything is well combined. The bananas will make the batter appear lumpy.
- Pour mixture into greased 4X8 inch loaf pan. Bake for 1 hr. Cool on wire rack. Remove from loaf pan to slice and serve.
